I wanted soup this afternoon after a particularly hectic school day, since comfort food tends to trump actual junk food for me, and miso, with its rich broth, silky seaweed bits, and adorable little ghostly bits of tofu, sounded like just the thing.
Of course, being me, I couldn't just leave it at plain miso with green onions and tofu bits. Nope, I went and dumped in a bunch of extra things because my stupid vegetable-addicted tastebuds are continuously possessed by Peter Rabbit
So yeah, this one's a heavily doctored version of miso soup. I boiled water with a little salt and cracked black pepper, then added in some washed and chopped vegetables, namely: a huge stick of celery, two more sticks of green onions/scallions (I will never get enough of those, ever.), a handful of sliced carrots, a handful of baby spinach, and a handful of microgreens. I think I might have been a rabbit in a past life.
The miso paste got added in after the vegetables were cooked tender, so everything kind of got an earthy tanginess in it.
For additional taste, I stirred in some garlic, some ginger, a little sesame oil, one or two drops of fish sauce, and a slice of ham cut into squares. The last three aren't really healthy, but I was craving saltiness and extra protein in my soup, so....
Oh well, at least it tastes good
